Every morning at the shop Uonuma Gen Soba is ground by using a stone grinder. Funori is Used in the NIHACHI(28) Soba, which is very waterish and elegant. HegiSoba is for 3 to 4 person (2500Yen). Dried herring which is boiled for 3 days and is very tender is also tasety.
